กลิ่นแมงดานา ถือเป็นหนึ่งในเอกลักษณ์ของอาหารไทย ด้วยกลิ่นหอมคล้ายถั่วคั่วและสมุนไพรอ่อน ๆ พร้อมโทนทะเลที่เป็นเอกลักษณ์ เพียงใช้ในปริมาณเล็กน้อยก็ช่วยเพิ่มเสน่ห์และความลุ่มลึกให้กับน้ำยำได้อย่างน่าประทับใจ เมนูนี้นำกลิ่นอันเป็นเอกลักษณ์ดังกล่าวมาผสานกับยำส้มโอรสกลมกล่อม ก่อนเสิร์ฟคู่ปูนิ่มทอดกรอบ มะพร้าวคั่ว หอมเจียว และถั่วลิสงคั่ว เพื่อเป็นเมนูที่ทั้งสดชื่น หอม และเต็มไปด้วยความหลากหลายของรสสัมผัส

  • ส้มโอแกะ400 กรัม

  • มะพร้าวคั่ว2 ช้อนโต๊ะ

  • หอมเจียว3 ช้อนโต๊ะ

  • ถั่วลิสงคั่ว2 ช้อนโต๊ะ

  • พริกจินดาซอย2 เม็ด

  • ใบมะกรูดซอย3 ใบ

  • ใบสะระแหน่10 กรัม

  • น้ำยำ

  • พริกแห้งเม็ดใหญ่2 เม็ด

  • กุ้งแห้ง (โขลก)5 กรัม

  • หอมแดง (ซอย)30 กรัม

  • กระเทียม (ซอย)15 กรัม

  • เกลือ¼ ช้อนชา

  • น้ำตาลมะพร้าว40 กรัม

  • น้ำปลา2 ช้อนโต๊ะ

  • น้ำมะขามเปียก2 ช้อนโต๊ะ

  • น้ำมะนาว1 ช้อนโต๊ะ

  • กลิ่นแมงดานา1–2 หยด

  • ปูนิ่มทอด

  • ปูนิ่ม3 ตัว

  • แป้งทอดกรอบ65 + 35 กรัม

  • น้ำเย็น3 ช้อนโต๊ะ

  • น้ำมันพืชสำหรับทอด

วิธีทำ


1.ทำน้ำยำ โขลกกุ้งแห้งให้ฟู พักไว้ หั่นพริกแห้งเป็นแว่น เคาะเม็ดออก นำไปคั่วพร้อมหอมแดงและกระเทียมจนหอม แล้วโขลกกับเกลือให้ละเอียด ใส่ลงในหม้อพร้อมกุ้งแห้ง น้ำตาลมะพร้าว น้ำปลา และน้ำมะขามเปียก ตั้งไฟเคี่ยวจนซอสข้นขึ้นเล็กน้อย ยกลงจากเตา พักให้อุ่น ใส่น้ำมะนาวและกลิ่นแมงดานา คนให้เข้ากัน แล้วพักให้เย็น

2.เตรียมปูนิ่ม ทำความสะอาด เอาถุงลมออก แล้วซับให้แห้งสนิท

3.ตั้งน้ำมันสำหรับทอดที่ 180 องศาเซลเซียส แบ่งแป้งทอดกรอบ 65 กรัม สำหรับชุบแห้ง และผสมแป้งทอดกรอบ 35 กรัม กับน้ำเย็นให้เป็นแป้งเปียก

4.คลุกปูนิ่มกับแป้งแห้ง เคาะแป้งส่วนเกินออก ชุบแป้งเปียกอย่างรวดเร็ว แล้วคลุกแป้งแห้งอีกครั้ง พักไว้ประมาณ 3–5 นาทีก่อนนำลงทอดจนเหลืองกรอบและสุกดี ตักขึ้นพักให้สะเด็ดน้ำมัน

5.เคล้าส้มโอกับน้ำยำที่เย็นแล้ว ใส่พริกจินดาซอย ใบมะกรูด และครึ่งหนึ่งของมะพร้าวคั่ว หอมเจียว และถั่วลิสงคั่ว เคล้าเบา ๆ ให้เข้ากัน

6.ตักยำส้มโอใส่จาน เรียงปูนิ่มทอดไว้ด้านบน ตกแต่งด้วยใบสะระแหน่ แล้วโรยมะพร้าวคั่ว หอมเจียว และถั่วลิสงคั่วที่เหลือ พร้อมเสิร์ฟ

Ingredients


  • Pomelo Segments400 g

  • Toasted Grated Coconut2 tbsp

  • Fried Shallots3 tbsp

  • Roasted Peanuts2 tbsp

  • Bird’s Eye Chilies (sliced)2

  • Kaffir Lime Leaves, finely sliced3

  • Mint Leaves10 g

  • Dressing

  • Large Dried Chilies2

  • Dried Shrimp (pounded)5 g

  • Shallots (sliced)30 g

  • Garlic (sliced)15 g

  • Salt¼ tsp

  • Palm Sugar40 g

  • Fish Sauce2 tbsp

  • Tamarind Puree2 tbsp

  • Lime Juice1 tbsp

  • Maengdana Essence1–2 drops

  • Crispy Soft-Shell Crab

  • Soft-Shell Crabs3

  • Crispy Frying Flour65 + 35 g

  • Ice-Cold Water3 tbsp

  • Vegetable Oilfor deep-frying

How to cook


1.Prepare the dressing. Pound the dried shrimp until fluffy and set aside. Slice the dried chilies into rings and discard the seeds. Toast the chilies together with the shallots and garlic until fragrant, then pound with the salt into a fine paste. Transfer to a saucepan with the dried shrimp, palm sugar, fish sauce, and tamarind puree. Simmer until the dressing thickens slightly. Remove from the heat and allow to cool until warm, then stir in the lime juice and Maengdana essence. Leave to cool completely.

2.Clean the soft-shell crabs by removing the gills and stomach sac, then pat dry thoroughly.

3.Heat the oil to 180°C. Reserve 65 g of the frying flour for dry coating. Mix the remaining 35 g with the ice-cold water to make a light batter.

4.Coat each crab lightly with the dry flour and shake off the excess. Dip briefly into the batter, then coat once more with the dry flour. Let rest for 3–5 minutes before deep-frying until golden brown and crisp. Drain well.

5.Toss the pomelo with the cooled dressing. Add the sliced bird's eye chilies, kaffir lime leaves, and half of the toasted coconut, fried shallots, and roasted peanuts. Toss gently to combine.

6.Arrange the pomelo salad on a serving plate and top with the crispy soft-shell crab. Garnish with the mint leaves, then scatter over the remaining toasted coconut, fried shallots, and roasted peanuts before serving.
