แป้งทอดไส้หมูและหัวไชเท้า ได้แรงบันดาลใจจากแป้งสอดไส้สไตล์จีนที่จี่บนกระทะจนผิวกรอบหอม สูตรนี้สอดไส้หัวไชเท้าผัดกับหมูสามชั้น กุ้งแห้ง และกุยช่าย ให้รสหวานธรรมชาติและความหอมกลมกล่อมในทุกคำ เสิร์ฟคู่กับซอสขิงรสเปรี้ยวอมหวาน

  • แป้งทอด

  • น้ำอุ่น120 กรัม

  • แป้งสาลีอเนกประสงค์200 กรัม

  • น้ำมันรำข้าว1 ช้อนโต๊ะ

  • เกลือ¼ กรัม

  • น้ำมันรำข้าวสำหรับทอด

  • ไส้

  • หมูสามชั้น180 กรัม

  • เหล้าจีน1 ช้อนชา

  • ซีอิ๊วขาว1 ช้อนชา

  • น้ำมันรำข้าว1 ช้อนชา

  • กระเทียม (สับ)1 กลีบ

  • กุ้งแห้ง10 กรัม

  • หัวไชเท้า (หั่นเต๋า)200 กรัม

  • น้ำตาลทราย1 ½ ช้อนชา

  • พริกไทยขาวป่น¼ ช้อนชา

  • เกลือ¼ ช้อนชา

  • กุยช่าย (หั่นท่อน)30 กรัม

  • ซอสขิง

  • จิ๊กโฉ่ว2 ช้อนโต๊ะ

  • ซีอิ๊วขาว1 ช้อนชา

  • ซีอิ๊วดำหวาน½ ช้อนชา

  • น้ำตาลทราย½ ช้อนชา

  • ขิง (ซอย)1 ช้อนโต๊ะ

  • พริกจินดา (ซอย)1 เม็ด

วิธีทำ


1.เตรียมแป้ง โดยผสมแป้งสาลี น้ำอุ่น น้ำมันรำข้าว และเกลือ นวดจนเนียนดี คลุมด้วยฟิล์มถนอมอาหาร พักไว้ 20 นาที

2.เตรียมไส้ หั่นหมูสามชั้นเป็นชิ้นเล็ก ๆ หมักกับเหล้าจีนและซีอิ๊วขาวประมาณ 10 นาที ล้างกุ้งแห้งผ่านน้ำสะอาดเพื่อลดความเค็ม แล้วแช่น้ำให้นุ่ม สะเด็ดน้ำพักไว้ หั่นกุยช่ายเป็นท่อนประมาณ 1 เซนติเมตร

3.ตั้งกระทะ ใส่น้ำมันรำข้าว ผัดกุ้งแห้งจนหอม ใส่หมูสามชั้นลงผัดจนเริ่มสุก ตามด้วยกระเทียม ผัดพอหอม ใส่หัวไชเท้า ปรุงรสด้วยน้ำตาลทราย พริกไทยขาว และเกลือ ผัดประมาณ 5–7 นาที หรือจนหัวไชเท้าสุกและน้ำส่วนเกินระเหยเกือบหมด ใส่กุยช่าย ผัดพอสลด ยกลงจากเตา กระจายไส้ใส่ถาด พักให้เย็นสนิท

4.แบ่งแป้งเป็นก้อนละ 40 กรัม จำนวน 8 ก้อน คลึงเป็นแผ่นกลม ตักไส้ประมาณ 35 กรัมลงตรงกลาง ห่อให้มิด ทำซ้ำจนหมด

5.ทำซอส โดยผสมจิ๊กโฉ่ว ซีอิ๊วขาว ซีอิ๊วดำหวาน และน้ำตาลทราย คนให้น้ำตาลละลาย ใส่ขิงซอยและพริกจินดาซอย

6.ตั้งกระทะด้วยไฟอ่อน เทน้ำมันรำข้าวบาง ๆ ให้เคลือบผิวกระทะ นำแป้งลงจี่ กดเบา ๆ ให้แผ่นแป้งสัมผัสกระทะทั่วถึง จี่ด้านละประมาณ 1–2 นาที หรือจนผิวกรอบและเป็นสีเหลืองทอง พร้อมเสิร์ฟกับซอสขิง

Inspired by Chinese-style stuffed pancakes that are pan-fried until crisp and golden, these savoury pancakes are filled with a flavourful mixture of daikon radish, pork belly, dried shrimp, and Chinese chives. The natural sweetness of the radish pairs beautifully with the rich, savoury filling, while the crisp exterior provides a satisfying contrast. Serve with a sweet-and-tangy ginger dipping sauce.

Ingredients


  • Pancake Dough

  • Warm Water120 g

  • All-purpose Flour200 g

  • Rice Bran Oil1 tbsp

  • Salt¼ g

  • Rice Bran Oilfor pan-frying

  • Filling

  • Pork Belly180 g

  • Shaoxing Wine1 tsp

  • Light Soy Sauce1 tsp

  • Rice Bran Oil1 tsp

  • Garlic (minced)1 clove

  • Dried Shrimp10 g

  • Daikon Radish (diced)200 g

  • Granulated Sugar1½ tsp

  • Ground White Pepper¼ tsp

  • Salt¼ tsp

  • Chinese Chives (cut into short pieces)30 g

  • Ginger Dipping Sauce

  • Chinkiang Vinegar2 tbsp

  • Light Soy Sauce1 tsp

  • Sweet Dark Soy Sauce½ tsp

  • Granulated Sugar½ tsp

  • Ginger (finely julienned)1 tbsp

  • Thai Red Chilli (sliced)1

How to cook


1.Prepare the dough. Combine the flour, warm water, rice bran oil, and salt. Knead until smooth. Cover with plastic wrap and leave to rest for 20 minutes.

2.Prepare the filling. Cut the pork belly into small pieces and marinate with the Shaoxing wine and light soy sauce for about 10 minutes. Rinse the dried shrimp briefly under clean water to remove excess salt, then soak until softened and drain well. Cut the Chinese chives into approximately 1 cm pieces.

3.Heat the rice bran oil in a frying pan. Add the dried shrimp and stir-fry until fragrant. Add the pork belly and cook until it begins to brown, then add the garlic and stir-fry until fragrant. Add the daikon radish and season with the sugar, white pepper, and salt. Cook for 5–7 minutes, or until the radish is tender and most of the excess moisture has evaporated. Add the Chinese chives and stir-fry briefly until just wilted. Remove from the heat, spread the filling out on a tray, and allow to cool completely.

4.Divide the dough into 8 equal portions, about 40 g each. Roll each portion into a round. Place approximately 35 g of filling in the centre, gather the edges around the filling, and seal well. Repeat with the remaining dough and filling.

5.Prepare the dipping sauce. Combine the Chinkiang vinegar, light soy sauce, sweet dark soy sauce, and sugar, stirring until the sugar dissolves. Add the julienned ginger and sliced chilli.

6.Heat a thin layer of rice bran oil in a frying pan over low heat. Add the filled pancakes and gently press them down so the surface makes even contact with the pan. Pan-fry for 1–2 minutes on each side, or until crisp and golden brown. Serve hot with the ginger dipping sauce.
