สโคนบลูเบอร์รี่ชีสเค้กที่รวมความอร่อยของสโคนและชีสเค้กไว้ในคำเดียว ตัวสโคนหอมผิวเลมอนและบลูเบอร์รี่ สอดไส้ชีสเค้กไวท์ช็อกโกแลตรสละมุน ก่อนเสิร์ฟเพิ่มไส้บลูเบอร์รี่และบลูเบอร์รี่สดให้รสหวานอมเปรี้ยวสดชื่น เมนูนี้อร่อยได้ในแบบที่แตกต่างกันตามอุณหภูมิ จะรับประทานอุ่น ๆ ให้สโคนนุ่มหอมและไส้ชีสเค้กละมุน รับประทานที่อุณหภูมิห้องเพื่อสัมผัสเนื้อสโคนและชีสเค้กที่ลงตัว หรือแช่เย็นให้ไส้ชีสเค้กแน่นเนียนและสดชื่น ก็อร่อยไปคนละแบบ

  • สโคน

  • แป้งสาลีอเนกประสงค์280 กรัม

  • ผงฟู2 ช้อนชา

  • เกลือ½ ช้อนชา

  • น้ำตาลทราย70 กรัม

  • ผิวเลมอน1 ผล

  • เนยจืด60 กรัม

  • ชอร์ตเททนิ่งน้ำมันรำข้าว60 กรัม

  • ไข่ไก่1 ฟอง

  • วิปปิ้งครีม120 กรัม

  • กลิ่นบลูเบอร์รี่½ ช้อนชา

  • กลิ่นวานิลลา¼ ช้อนชา

  • ไข่ไก่สำหรับทาหน้า

  • น้ำตาลทรายสำหรับโรยหน้า

  • ไส้ชีสเค้ก

  • ครีมชีส160 กรัม

  • น้ำตาลไอซิ่ง40 กรัม

  • น้ำเลมอน1 ช้อนโต๊ะ

  • ไวท์ช็อกโกแลต40 กรัม

  • ไส้บลูเบอร์รี่สำหรับเสิร์ฟ

  • บลูเบอร์รี่สดสำหรับเสิร์ฟ

  • น้ำตาลไอซิ่งสำหรับเสิร์ฟ

วิธีทำ


1.เตรียมสโคน โดยขูดผิวเลมอนลงในน้ำตาลทราย ใช้มือถูให้น้ำมันหอมระเหยจากผิวเลมอนออกมาผสมกับน้ำตาล ใส่แป้งสาลีอเนกประสงค์ ผงฟู และเกลือ ใช้ตะกร้อคนให้เข้ากัน

2.ใส่เนยจืดหั่นเต๋าและชอร์ตเทนนิ่งน้ำมันรำข้าว ใช้ที่สับแป้งสับส่วนผสมจนมีลักษณะเป็นเม็ดเล็ก ๆ คล้ายเม็ดทราย

3.ตีไข่ไก่กับวิปปิ้งครีม กลิ่นบลูเบอร์รี่ และกลิ่นวานิลลาให้เข้ากัน เทลงในส่วนผสมแป้ง ใช้พายยางคนเพียงพอให้ส่วนผสมจับตัวกัน แบ่งเป็น 12 ส่วนเท่า ๆ กัน ส่วนละประมาณ 50-55 กรัม

4.ทาน้ำมันบาง ๆ ที่พิมพ์คัพเค้กขนาด 12 หลุม ขึ้นรูปสโคนแต่ละส่วนเป็นก้อนกลมหลวม ๆ วางลงในพิมพ์ แล้วกดตรงกลางให้เป็นแอ่งสำหรับใส่ไส้ นำไปแช่เย็น 20 นาที

5.เตรียมไส้ชีสเค้ก โดยพักครีมชีสที่อุณหภูมิห้องจนนุ่ม ตีกับน้ำตาลไอซิ่งด้วยความเร็วต่ำให้เนียน ใส่น้ำเลมอน ผสมให้เข้ากัน ละลายไวท์ช็อกโกแลต พักให้คลายความร้อนเล็กน้อย ใส่ลงในส่วนผสมครีมชีส คนเบา ๆ จนเนียนเป็นเนื้อเดียวกัน แล้วใส่ถุงบีบเตรียมไว้

6.นำสโคนออกจากตู้เย็น ทาไข่บาง ๆ บริเวณขอบและโรยด้วยน้ำตาลทราย บีบไส้ชีสเค้กลงในแอ่งตรงกลาง นำเข้าอบที่ 180 องศาเซลเซียส เป็นเวลา 22 นาที หรือจนสโคนสุกและมีสีเหลืองทอง นำออกจากเตา พักให้เย็นสนิท

7.ก่อนเสิร์ฟ ตักไส้บลูเบอร์รี่ลงบนชีสเค้ก ตกแต่งด้วยบลูเบอร์รี่สด และโรยน้ำตาลไอซิ่งบาง ๆ ให้สวยงาม

Ingredients


  • Scones

  • All-purpose Flour280 g

  • Baking Powder2 tsp

  • Salt½ tsp

  • Granulated Sugar70 g

  • Zest of 1 Lemon

  • Unsalted Butter60 g

  • Rice Bran Oil Shortening60 g

  • Egg1

  • Whipping Cream120 g

  • Blueberry Flavouring½ tsp

  • Vanilla Extract¼ tsp

  • Eggfor brushing

  • Granulated Sugarfor sprinkling

  • Cream Cheese160 g

  • Icing Sugar40 g

  • Lemon Juice1 tbsp

  • White Chocolate40 g

How to cook


1.Prepare the scones. Add the lemon zest to the granulated sugar and rub together with your fingertips to release the fragrant oils from the zest. Add the flour, baking powder, and salt, and whisk to combine.

2.Add the cold unsalted butter, cut into small cubes, and the rice bran oil shortening. Using a pastry cutter, cut the fats into the flour mixture until it resembles coarse crumbs.

3.Whisk together the egg, whipping cream, blueberry flavouring, and vanilla extract. Pour into the flour mixture and gently fold with a spatula just until the dough comes together. Divide into 12 equal portions, approximately 50–55 g each.

4.Lightly grease a 12-hole muffin tin. Loosely shape each portion of dough into a ball and place into the prepared tin. Press the centre of each scone to create a well for the cheesecake filling. Refrigerate for 20 minutes.

5.Prepare the cheesecake filling. Allow the cream cheese to soften at room temperature. Beat with the icing sugar on low speed until smooth. Add the lemon juice and mix until combined. Melt the white chocolate and allow it to cool slightly, then add to the cream cheese mixture. Gently mix until smooth and transfer to a piping bag.

6.Remove the scones from the refrigerator. Lightly brush the edges with beaten egg and sprinkle with granulated sugar. Pipe the cheesecake filling into the centre of each scone. Bake at 180°C for 22 minutes, or until the scones are cooked through and golden brown. Remove from the oven and allow to cool completely.

7.Just before serving, spoon blueberry filling over the cheesecake centres. Garnish with fresh blueberries and finish with a light dusting of icing sugar.
