คาเปลลินีในกลิ่นอายสไตล์จีน โดยเติมเบกกิ้งโซดาในน้ำต้มเพื่อปรับเนื้อสัมผัสของเส้นให้คล้ายบะหมี่ ก่อนนำไปเคล้าเครื่องปรุงและจี่บนกระทะจนหอม เพื่อให้มีทั้งส่วนที่นุ่มและกรอบเล็กน้อย เสิร์ฟกับเต้าหู้และเห็ดออรินจิปรุงรสหอมเครื่องพะโล้ พร้อมผักสดและงาคั่ว เป็นอีกหนึ่งเมนูเจที่เต็มไปด้วยรสชาติและเนื้อสัมผัสที่หลากหลาย

  • แตงกวา (ซอย)สำหรับเสิร์ฟ

  • งาขาวคั่วสำหรับเสิร์ฟ

  • เต้าหู้และเห็ดปรุงรส

  • เต้าหู้แข็ง200 กรัม

  • เห็ดออรินจิ150 กรัม

  • ซีอิ๊วขาว1 ช้อนโต๊ะ

  • จิ๊กโฉ่ว1 ช้อนชา

  • น้ำตาลทราย1 ช้อนชา

  • ผงพะโล้¼ ช้อนชา

  • พริกไทยขาวป่น¼ ช้อนชา

  • แป้งข้าวโพด1 ช้อนโต๊ะ

  • น้ำมันพืช1 ช้อนโต๊ะ

วิธีทำ


1.บีบน้ำออกจากเต้าหู้ให้ได้มากที่สุด ใช้มือบิเต้าหู้เป็นชิ้นเล็ก ๆ หั่นเห็ดออรินจิตามยาวเป็น 4 ส่วน พักไว้

2.ผสมซีอิ๊วขาว จิ๊กโฉ่ว น้ำตาลทราย ผงพะโล้ พริกไทยขาว และแป้งข้าวโพดให้เข้ากัน ใส่เต้าหู้และเห็ดออรินจิ เคล้าให้เครื่องปรุงเคลือบทั่ว เติมน้ำมันพืช เคล้าอีกครั้ง แล้วจัดเรียงลงในตะกร้าหม้อทอดลมร้อน ทอดที่ 200 องศาเซลเซียส ประมาณ 18 นาที หรือจนผิวขึ้นสีและกรอบเล็กน้อย

3.ตั้งน้ำ 1½ ลิตรให้เดือด ใส่เกลือและเบกกิ้งโซดา ตามด้วยเส้นคาเปลลินี ต้มเป็นเวลา 4 นาที สะเด็ดน้ำ แล้วล้างผ่านน้ำเย็นเพื่อหยุดความร้อน สะเด็ดน้ำให้ดี

4.ผสมซีอิ๊วขาว จิ๊กโฉ่ว น้ำตาลทราย และน้ำมันงาให้เข้ากัน ใส่เส้นคาเปลลินีลงเคล้ากับซอสให้ทั่ว แบ่งเส้นออกเป็น 2 ส่วน

5.ตั้งกระทะให้ร้อน ทาน้ำมันพืชบาง ๆ ให้ทั่ว ใส่เส้นหนึ่งส่วนลงไป เกลี่ยเป็นแผ่นบาง ใช้ไฟกลางจี่จนด้านล่างขึ้นสีและเส้นบางส่วนกรอบ พลิกกลับด้าน จี่ต่อจนขึ้นสีและกรอบตามต้องการ ทำซ้ำกับเส้นที่เหลือ

6.จัดเส้นคาเปลลินีกรอบลงในจาน ฉีกผักกาดหอมวางด้านบน ตักเต้าหู้และเห็ดปรุงรสตามลงไป โรยแตงกวาซอยและงาขาวคั่ว เสิร์ฟขณะร้อน

Capellini with a Chinese-inspired twist. Baking soda is added to the cooking water to give the pasta a texture closer to Chinese noodles. The capellini is then seasoned and pan-seared until fragrant, creating a combination of soft and lightly crisp textures. Served with tofu and king oyster mushrooms seasoned with aromatic five-spice, along with fresh vegetables and toasted sesame seeds, this is a flavorful Jay (Chinese vegan) dish with plenty of contrasting textures.

Ingredients


  • Capellini No. 1160 g

  • Saltfor cooking the pasta

  • Baking Soda1 tsp

  • Vegetable Oilfor pan-searing

  • Light Soy Sauce2 tsp

  • Chinese Black Vinegar2 tsp

  • Sugar1 tsp

  • Sesame Oil1 tsp

  • Lettucefor serving

  • Cucumber, juliennedfor serving

  • Toasted White Sesame Seedsfor serving

  • Five-Spice Tofu & Mushrooms

  • Firm Tofu200 g

  • King Oyster Mushrooms150 g

  • Light Soy Sauce1 tbsp

  • Chinese Black Vinegar1 tsp

  • Sugar1 tsp

  • Chinese Five-spice Powder¼ tsp

  • Ground White Pepper¼ tsp

  • Cornstarch1 tbsp

  • Vegetable Oil1 tbsp

How to cook


1.Press as much moisture as possible from the tofu, then tear it by hand into small pieces. Cut the king oyster mushrooms lengthwise into quarters. Set aside.

2.Combine the light soy sauce, Chinese black vinegar, sugar, five-spice powder, white pepper, and cornstarch. Add the tofu and king oyster mushrooms and toss until evenly coated. Add the vegetable oil and toss again. Arrange in the air-fryer basket and air-fry at 200°C for approximately 18 minutes, or until nicely browned and lightly crisp.

3.Bring 1½ liters of water to a boil. Add salt and baking soda, followed by the capellini. Cook for 4 minutes. Drain and rinse under cold water to stop the cooking process, then drain thoroughly.

4.Combine the light soy sauce, Chinese black vinegar, sugar, and sesame oil. Add the capellini and toss until evenly coated. Divide the noodles into 2 portions.

5.Heat a frying pan and lightly coat with vegetable oil. Add one portion of the capellini and spread into a thin, even layer. Pan-sear over medium heat until the underside is browned and some of the noodles become crisp. Flip and cook the other side until browned and crisp to your liking. Repeat with the remaining capellini.

6.Arrange the pan-seared capellini on a serving plate. Top with torn lettuce, followed by the five-spice tofu and mushrooms. Finish with julienned cucumber and toasted white sesame seeds. Serve hot.
