ชีสเค้กญี่ปุ่นที่โดดเด่นด้วยเนื้อสัมผัสเบา นุ่มและฉ่ำ ซึ่งจะต่างจากชีสเค้กเนื้อแน่นที่เราคุ้นเคย โดยใช้เมอแรงช่วยสร้างโครงสร้างและอบแบบรองน้ำ เพื่อให้เค้กค่อย ๆ สุกอย่างนุ่มนวล โดดเด่นด้วยความหอมมันของครีมชีส ตัดด้วยรสสดชื่นของเลมอน ได้ชีสเค้กรสละมุนที่อร่อยทั้งเมื่อรับประทานที่อุณหภูมิห้องหรือแช่เย็น

ส่วนประกอบ


  • ครีมชีส250 กรัม

  • น้ำตาลทราย50 กรัม

  • น้ำมันรำข้าว80 กรัม

  • นมสด120 กรัม

  • ไข่แดง6 ฟอง

  • น้ำเลมอน40 กรัม

  • แป้งข้าวโพด60 กรัม

  • ไข่ขาว6 ฟอง

  • น้ำตาลทราย100 กรัม

  • น้ำตาลไอซิ่งสำหรับเสิร์ฟ

วิธีทำ


1.หั่นครีมชีสเป็นชิ้นเล็ก ๆ ใส่ชามผสมพร้อมน้ำตาลทราย 50 กรัม และน้ำมันรำข้าว ตีให้เข้ากัน นำชามขึ้นวางบนหม้อน้ำร้อน คนด้วยตะกร้อมือจนส่วนผสมเนียนและมีอุณหภูมิประมาณ 60 องศาเซลเซียส ยกออกจากความร้อน

2.ตีไข่แดง นมสด น้ำเลมอน และแป้งข้าวโพดให้เข้ากัน ใส่ลงในส่วนผสมครีมชีส คนจนเป็นเนื้อเดียวกัน พักไว้

3.ตีไข่ขาวจนเริ่มขึ้นฟู ค่อย ๆ ใส่น้ำตาลทราย 100 กรัม ตีต่อจนได้เมอแรงเนื้อเนียนเป็นเงา มีลักษณะยอดอ่อนถึงยอดกลาง (Soft–Medium Peak)

4.แบ่งเมอแรงเป็น 3 ส่วน ตะล่อมส่วนแรกลงในส่วนผสมครีมชีสให้เข้ากัน ตามด้วยส่วนที่สองและส่วนที่สาม ตะล่อมเบา ๆ จนเป็นเนื้อเดียวกัน

5.เตรียมพิมพ์ถอดก้นได้ขนาด 8 นิ้ว รองกระดาษไขเฉพาะก้นพิมพ์ โดยไม่ต้องทาไขมันหรือรองกระดาษด้านข้าง ห่อด้านนอกและก้นพิมพ์ด้วยอะลูมิเนียมฟอยล์ 2 ชั้นเพื่อป้องกันน้ำซึม แล้ววางลงในถาดอบขอบสูงที่มีขนาดใหญ่กว่า

6.เทส่วนผสมลงในพิมพ์ เคาะพิมพ์เบา ๆ เพื่อไล่ฟองอากาศขนาดใหญ่ เทน้ำร้อนลงในถาดอบให้สูงประมาณ 1 นิ้ว นำเข้าอบที่ 150 องศาเซลเซียส เป็นเวลา 1 ชั่วโมง 15 นาที เมื่อครบเวลา ปิดเตาอบ แง้มประตูเตาเล็กน้อย และพักเค้กไว้ในเตาอบต่ออีก 30 นาที

7.นำเค้กออกจากเตา พักที่อุณหภูมิห้องจน เย็นสนิท ใช้มีดบาง ๆ แซะรอบขอบเค้กอย่างเบามือ ก่อนนำออกจากพิมพ์ เสิร์ฟที่อุณหภูมิห้อง หรือแช่เย็นก่อนเสิร์ฟเพื่อให้เนื้อสัมผัสแน่นขึ้น โรยน้ำตาลไอซิ่งตามชอบ

Japanese cotton cheesecake is known for its light, soft, and moist texture, quite different from the dense style of cheesecake many people are familiar with. Meringue gives the cake its delicate structure, while baking it in a water bath allows it to cook gently and evenly. Rich cream cheese is balanced with fresh lemon for a smooth, delicate flavor that is delicious either at room temperature or chilled.

Ingredients


  • Cream Cheese250 g

  • Granulated Sugar50 g

  • Rice Bran Oil80 g

  • Fresh Milk120 g

  • Egg Yolks6

  • Lemon Juice40 g

  • Cornstarch60 g

  • Egg Whites6

  • Granulated Sugar100 g

  • Icing Sugarfor serving

How to cook


1.Cut the cream cheese into small pieces and place in a mixing bowl with 50 g granulated sugar and the rice bran oil. Mix until combined. Set the bowl over a pan of hot water and whisk until smooth and the mixture reaches approximately 60°C. Remove from the heat.

2.Whisk together the egg yolks, milk, lemon juice, and cornstarch. Add to the cream cheese mixture and whisk until smooth. Set aside.

3.Beat the egg whites until foamy. Gradually add the 100 g granulated sugar and continue beating until the meringue is smooth and glossy, reaching soft to medium peaks.

4.Divide the meringue into 3 portions. Fold the first portion into the cream cheese mixture until combined, then gently fold in the second and third portions until the batter is uniform.

5.Prepare an 8-inch removable-bottom cake pan. Line only the base with baking paper; do not grease or line the sides. Wrap the outside and bottom of the pan with 2 layers of aluminum foil to prevent water from seeping in, then place it in a larger deep-sided roasting pan.

6.Pour the batter into the prepared pan and tap it gently to release any large air bubbles. Pour hot water into the roasting pan to a depth of about 1 inch. Bake at 150°C for 1 hour 15 minutes. Turn off the oven, leave the door slightly ajar, and let the cheesecake rest inside for another 30 minutes.

7.Remove the cake from the oven and leave it at room temperature until completely cool. Run a thin knife gently around the edge before removing it from the pan. Serve at room temperature, or chill before serving for a slightly firmer texture. Dust with icing sugar as desired.
