Taiwanese popcorn chicken is a popular street food commonly found at night markets across Taiwan. Its distinctive flavor comes from a marinade made with fermented bean curd and five-spice powder, which adds both umami and a characteristic aromatic depth. The chicken is coated and fried twice for a craggy, extra-crisp exterior while keeping the meat tender and juicy inside. Finished with fried Thai basil, salt, and white pepper, it makes a fragrant, flavor-packed bite-sized snack.
