.Toss the sea bass pieces with one portion of the yellow curry sauce until evenly coated. Add the egg white and gently mix to coat the fish.

.Heat 1 tablespoon of vegetable oil in a wok. Stir-fry the bia liang leaves until just wilted. Remove and set asided.

.Add the remaining 2 tablespoons of vegetable oil to the wok. Sauté the garlic, shallot, and dried shrimp until fragrant. Add the Sen Chan rice noodles and toss to coat evenly with the oil. Gradually add water, a little at a time, and cook until the noodles are tender. Add the remaining yellow curry sauce and toss until evenly coated.

.Push the noodles to one side of the wok. Beat the 2 eggs together with the reserved egg yolk. Pour the egg mixture into the empty side of the wok and gently scramble until just beginning to set. Add the cooked bai liang leaves and sliced red spur chili, then toss everything together until well combined.

.Transfer the noodles to a serving plate. Arrange the crispy sea bass on top and garnish with the fried dried chilies. Serve immediately.
