Shredded tofu or shredded chicken? The secret to this dish is a simple technique: grating firm tofu through the large holes of a cheese grater. This creates long, thin shreds that resemble pulled chicken while increasing the surface area, allowing moisture to evaporate more easily during pan-frying. As the tofu cooks, it develops a firmer texture with lightly golden edges and becomes better at absorbing sauce. Stir-fried with green beans and a savory gochujang sauce, this dish offers an exciting combination of flavors and textures.

Ingredients

  • Firm Tofu200 g

  • Green Beans100 g

  • Spring Onions2 stalks

  • Rice Bran Oilfor deep-frying

  • Rice Bran Oil1½ tbsp

  • Garlic (minced)1 tbsp

  • Shallots (minced)2 tbsp

  • Thai Red Chili (sliced)1

  • Shoyu1 tbsp

  • Rice Vinegar2 tsp

  • Gochujang10 g

  • Granulated Sugar1 tsp

  • Toasted White Sesame Seeds1 tsp

How to cook

1.Thinly slice the spring onions, keeping the white and green parts separate. Set aside.

2.Pat the tofu dry with paper towels. Using the large holes of a cheese grater, grate the tofu into long shreds resembling pulled chicken. Set aside.

3.Cut the green beans into short lengths. Heat the oil for deep-frying to 180°C. Fry the green beans until tender and their skins begin to wrinkle. Remove and drain well.

4.In a small bowl, combine the shoyu, rice vinegar, gochujang, and sugar. Mix well and set aside.

5.Heat 1½ tablespoons of rice bran oil in a frying pan. Add the garlic, shallots, Thai chili, and white parts of the spring onions. Stir-fry until fragrant and softened. Add the shredded tofu, spreading it out to make contact with the pan. Allow it to brown lightly before stirring. Continue cooking over medium heat for 4–5 minutes, until some moisture has evaporated and the tofu develops lightly golden edges.

6.Add the fried green beans and prepared sauce. Increase the heat slightly and stir-fry briefly until everything is evenly coated. Remove from the heat and transfer to a serving plate. Garnish with toasted white sesame seeds and the green parts of the spring onions.
