ชูว์ครีมหงส์ที่มาพร้อมกับครีมวานิลลาเนื้อเบา ขนมคลาสิกในความทรงจำของใครหลายคน แม้ทุกวันนี้จะไม่ค่อยได้เห็นกันแล้ว แต่ความน่ารักของขนมชนิดนี้ก็ยังไม่เคยจางหาย สูตรนี้ขอหยิบความทรงจำในวันวานกลับมาอีกครั้ง พร้อมสอดไส้วานิลลาสองเนื้อสัมผัส ทั้งคัสตาร์ดวานิลลาเนื้อเข้มข้น และครีมชองติยีวานิลลาเนื้อเบา ให้ขนมคลาสสิกชิ้นนี้กลับมาชวนยิ้มได้อีกครั้ง

ส่วนประกอบ


  • แป้งชูว์

  • น้ำสะอาด170 มิลลิลิตร

  • เนยจืด85 กรัม

  • เกลือ¼ ช้อนชา

  • น้ำตาลทราย1 ช้อนชา

  • แป้งสาลีอเนกประสงค์100 กรัม

  • ไข่ไก่4 ฟอง

  • น้ำตาลไอซิ่งสำหรับเสิร์ฟ

  • คัสตาร์ดวานิลลา

  • ไข่แดง2 ฟอง

  • น้ำตาลทราย45 กรัม

  • แป้งข้าวโพด16 กรัม

  • แป้งสาลีอเนกประสงค์8 กรัม

  • กลิ่นวานิลลา1 ช้อนชา

  • นมสด200 มิลลิลิตร

  • เกลือ⅛ ช้อนชา

  • เนยจืด15 กรัม

  • ครีมชองติยีวานิลา

  • วิปปิ้งครีม500 กรัม

  • กลิ่นวานิลลา1½ ช้อนชา

  • เจลาติน1½ ช้อนชา

  • น้ำสะอาด1 ช้อนโต๊ะ

  • น้ำตาลไอซิ่ง35 กรัม

วิธีทำ


1.เปิดเตาอบที่ 190°C เตรียมถาดอบ 2 ถาด รองด้วยแผ่นรองอบ

2.ใส่น้ำ เนย เกลือ และน้ำตาลลงในหม้อ ตั้งไฟกลางจนเนยละลายและส่วนผสมเดือด ยกหม้อออกจากเตา ใส่แป้งสาลีทั้งหมดลงไป คนเร็ว ๆ ให้แป้งจับตัวเป็นก้อน จากนั้นนำกลับขึ้นตั้งไฟ กวนต่อประมาณ 1 นาที จนแป้งล่อนออกจากก้นหม้อและมีฟิล์มแป้งบาง ๆ เคลือบก้นหม้อ ย้ายแป้งลงในโถผสม

3.ตีไข่ไก่ทั้ง 4 ฟองให้เข้ากัน ค่อย ๆ เติมลงในแป้งทีละน้อย ตีให้เข้ากันทุกครั้งก่อนเติมเพิ่ม จนได้แป้งชูว์ที่เนียนเป็นมัน เมื่อยกพายขึ้น แป้งจะไหลเป็นริบบิ้นและปลายงอเป็นรูปตัว V อาจใช้ไข่ไม่หมด ขึ้นอยู่กับความชื้นของแป้ง

4.ตักแป้งใส่ถุงบีบที่ติดหัวบีบดาวขนาดใหญ่ บีบเป็นลำตัวหงส์ 16 ชิ้น โดยเริ่มบีบให้เป็นก้อนกลมอวบ แล้วตวัดปลายให้เรียวยาวเป็นหาง

5.เปลี่ยนเป็นหัวบีบขนาดเล็ก บีบเป็นคอหงส์ 16 ชิ้น ให้โค้งคล้ายเครื่องหมายคำถาม (?) แล้วบีบเพิ่มบริเวณส่วนหัวและจงอยปากเล็กน้อย อบประมาณ 12 นาที หรือจนสุกและเป็นสีเหลืองทอง นำออกมาพักบนตะแกรงให้เย็นสนิท

6.อบลำตัวหงส์ที่อุณหภูมิ 190°C เป็นเวลา 25 นาที จากนั้นลดอุณหภูมิลงเหลือ 100°C อบต่ออีก 5 นาที เพื่อช่วยไล่ความชื้นและทำให้แป้งคงรูป ก่อนนำออกมาพักบนตะแกรงจนเย็นสนิท

7.ทำคัสตาร์ดวานิลลา โดยตีไข่แดง น้ำตาลทราย และวานิลลาให้เข้ากันจนสีอ่อนลงเล็กน้อย ใส่แป้งข้าวโพดและแป้งสาลี คนให้เนียน เติมนม และเกลือ คนให้เข้ากัน แล้วนำขึ้นตั้งไฟกลาง กวนจนคัสตาร์ดข้น เนียน และเดือดประมาณ 1 นาที ยกออกจากเตา ใส่เนยจืด คนจนละลายเข้ากันดี เทลงภาชนะ ปิดฟิล์มถนอมอาหารแนบผิวหน้า พักให้คลายร้อนเล็กน้อย ก่อนนำเข้าตู้เย็นจนเย็นสนิท

8.ทำครีมชองติยีวานิลลา โดยผสมเจลาตินผงกับน้ำสะอาด พักไว้ประมาณ 5 นาทีให้พองตัว ตักวิปปิ้งครีมประมาณ 2 ช้อนโต๊ะใส่ถ้วย อุ่นในไมโครเวฟให้พอร้อน ใส่เจลาตินลงไป คนจนละลายดี จากนั้นค่อย ๆ เติมวิปปิ้งครีมที่เหลือลงในส่วนผสมเจลาติน พร้อมคนตลอดเวลา ใส่น้ำตาลไอซิ่งและวานิลลา คนให้เข้ากัน นำชามผสมวางบนอ่างน้ำเย็นหรือน้ำแข็ง คนเบา ๆ จนส่วนผสมเย็นจัด แต่ยังไม่เริ่มเซตตัว แล้วตีด้วยเครื่องตีไฟฟ้าจนครีมตั้งยอดปานกลาง (Medium Peak) นำใส่ถุงบีบ เตรียมไว้

9.นำคัสตาร์ดออกจากตู้เย็น คนให้เนียน แล้วตักใส่ถุงบีบ

10.สไลด์ส่วนบนของลำตัวหงส์ออก แล้วผ่าครึ่งตามแนวยาวให้เป็นปีกทั้งสองข้าง บีบคัสตาร์ดวานิลลาลงตรงกลางประมาณ 1 ช้อนโต๊ะ จากนั้นบีบครีมชองติยีวานิลลาคลุมให้ทั่ว ปักคอหงส์ลงด้านหน้า แล้วเสียบปีกทั้งสองข้างลงในครีมให้แนบกับคอหงส์ โรยน้ำตาลไอซิ่งบาง ๆ พร้อมเสิร์ฟ

Ingredients


  • Choux Pastry

  • Water170 ml

  • Unsalted Butter85 g

  • Salt¼ tsp

  • Sugar1 tsp

  • All-Purpose Flour100 g

  • Eggs4

  • Icing Sugarfor dusting

  • Vanilla Pastry Cream

  • Egg Yolks2

  • Sugar45 g

  • Cornstarch16 g

  • All-Purpose Flour8 g

  • Vanilla Extract1 tsp

  • Milk200 ml

  • Salt⅛ tsp

  • Unsalted Butter15 g

  • Vanilla Chantilly Cream

  • Whipping Cream500 g

  • Vanilla Extract1½ tsp

  • Gelatin1½ tsp

  • Water1 tbsp

  • Icing Sugar35 g

How to cook


1.Preheat the oven to 190°C. Line two baking trays with baking mats or parchment paper.

2.Combine the water, butter, salt, and sugar in a saucepan over medium heat until the butter melts and the mixture comes to a boil. Remove from the heat, add the flour all at once, and stir vigorously until a dough forms. Return the pan to the heat and cook for about 1 minute, stirring constantly, until the dough pulls away from the sides of the pan and a thin film forms on the bottom. Transfer the dough to a mixing bowl.

3.Lightly beat the eggs. Gradually add them to the dough a little at a time, mixing well after each addition, until the pastry is smooth and glossy. When lifted with a spatula, the dough should fall in a ribbon and form a soft V-shapedtip. You may not need all of the eggs depending on the consistency of the dough.

4.Transfer the pastry to a piping bag fitted with a large open star tip. Pipe 16 swan bodies, forming rounded mounds with a tapered tail.

5.Fit the piping bag with a small plain tip. Pipe 16 swan necks, shaping each into a question mark ( ? ). Pipe a small extra dot of pastry at the top to form the head and beak. Bake for about 12 minutes, or until golden brown. Transfer to a wire rack to cool completely.

6.Bake the swan bodies at 190°C for 25 minutes, then reduce the oven temperature to 100°C and bake for another 5 minutes to dry the pastry. Transfer to a wire rack and cool completely.

7.To make the vanilla pastry cream, whisk together the egg yolks, sugar, and vanilla until slightly lighter in color. Whisk in the cornstarch and flour until smooth. Add the milk and salt, then cook over medium heat, stirring constantly, until the custard thickens and boils for about 1 minute. Remove from the heat, stir in the butter until melted, transfer to a container, cover the surface directly with plastic wrap, cool slightly, then refrigerate until completely chilled.

8.To make the vanilla Chantilly cream, sprinkle the gelatin over the water and let it bloom for 5 minutes. Warm about 2 tablespoons of the whipping cream until hot, then stir in the bloomed gelatin until dissolved. Gradually whisk in the remaining cold cream, followed by the icing sugar and vanilla. Place the bowl over an ice bath and stir until well chilled but not beginning to set. Whip with an electric mixer until medium peaks form. Transfer to a piping bag.

9.Stir the chilled pastry cream until smooth, then transfer it to a piping bag.

10.Slice the top off each swan body and cut the top piece lengthwise to create two wings. Pipe about 1 tablespoon of vanilla pastry cream into the base, then pipe the Chantilly cream generously over the top. Insert the swan neck at the front and tuck the wings into the cream on either side. Dust lightly with icing sugar before serving.
