Inspired by the rich creaminess of truffle carbonara, this fusion pasta brings in the distinctive character of mala spice, adding aromatic heat and a gentle numbing sensation to create a sauce with greater depth. It is served with a crispy breaded pork chop that stays tender and juicy inside, along with sweet and tangy green apple for a refreshing contrast. The result is a playful fusion pasta with layers of flavor and texture in every component.

  • Truffle Carbonara Sauce200 g

  • Mala Seasoning1 tsp

  • Light Soy Sauce½ tsp

  • Pasta Cooking Water4 tbsp

  • Spring Onion (sliced)for serving

How to cook

1.Prepare the brine for the pork chop by combining the water, salt, and sugar, stirring until dissolved. Add the pork loin and refrigerate in the brine for about 1 hour.

2.Prepare the green apple by julienning it, with the skin on, into 2–3 mm strips. Combine the rice vinegar, sugar, and salt, then toss with the apple. Set aside.

3.Remove the pork chop from the brine and pat dry. Coat in flour, dip in beaten egg, then coat evenly with breadcrumbs. Fry in hot oil until golden, crispy, and cooked through. Transfer to a wire rack and lightly sprinkle with mala seasoning while still hot. Set aside.

4.Bring a pot of salted water to a boil. Cook the fettuccine until al dente. Reserve some of the pasta cooking water, then drain.

5.Add the truffle carbonara sauce to a pan along with the reserved pasta water, light soy sauce, and mala seasoning. Heat over low to medium heat, stirring until well combined.

6.Add the fettuccine and toss until the pasta is evenly coated with the sauce.

7.Arrange the mala truffle carbonara fettuccine on a serving plate. Slice the crispy pork chop and place over the pasta. Serve with the pickled green apple, then finish with an extra sprinkle of mala seasoning and sliced spring onion.
