A crispy beer-battered sea bass burger, fried until golden brown. The carbonation in the beer creates a light, airy, and crispy batter with a distinctive aroma, while keeping the fish tender and juicy inside. Layered with cheddar cheese, pickles, and mayonnaise, then served in warm, buttery toasted burger buns.

Ingredients

  • Skinless Sea Bass Fillets4 pieces

  • Saltto season

  • Black Pepperto season

  • All-purpose Flour100 g

  • Rice Flour55 g

  • Granulated Sugar1 tsp

  • Baking Powder2½ tsp

  • Salt1 tsp

  • Beer250 ml

  • Vegetable Oilfor deep-frying

  • Cheddar Cheese4 slices

  • Burger Buns4

  • Unsalted Butterfor spreading

  • Mayonnaisefor serving

  • Picklesfor serving

How to cook

1.Pat the sea bass fillets thoroughly dry with paper towels. Season evenly with salt and black pepper. Set aside.

2.Heat the oil for deep-frying to 180°C.

3.In a mixing bowl, combine the all-purpose flour, rice flour, sugar, baking powder, and salt. Pour in the ice-cold beer and stir gently just until combined. Avoid overmixing.

4.Dip each sea bass fillet into the beer batter, coating it evenly. Carefully lower into the hot oil and fry until golden brown and crispy, and the fish is cooked through. Remove and drain on a wire rack. While the fish is still hot, place a slice of cheddar cheese on top to allow it to melt slightly.

5.Lightly spread unsalted butter on the cut sides of the burger buns. Toast until warm, lightly golden, and fragrant. Spread mayonnaise on both cut sides of each bun. Arrange the pickles on the bottom bun, followed by the crispy fish and melted cheddar. Cover with the top bun. Repeat to assemble 4 burgers and serve immediately.
