ส่วนประกอบ


  • ถั่วลิสงดิบ50 กรัม

  • น้ำมันพืชสำหรับทอด

  • ฟองเต้าหู้อบแห้ง40 กรัม

  • ปวยเล้ง200 กรัม

  • น้ำมันงา2 ช้อนชา

  • พริกชวงเจีย½ ช้อนชา

  • พริกแห้ง3 เม็ด

  • ซีอิ๊วขาว2 ช้อนโต๊ะ

  • จิ๊กโฉ่ว2 ช้อนโต๊ะ

  • น้ำตาลทราย1 ช้อนชา

วิธีทำ


1.ล้างถั่วลิสงผ่านน้ำ ซับให้แห้งหมาด ใส่ลงในกระทะ เติมน้ำมันพืชให้พอท่วมถั่ว ตั้งไฟอ่อนถึงกลาง ทอดช้า ๆ จนถั่วสุกและเปลือกมีสีน้ำตาลแดงเข้ม ตักขึ้นสะเด็ดน้ำมัน พักให้เย็นและกรอบดี เทน้ำมันออกจากกระทะ โดยเหลือไว้เพียงเล็กน้อยให้เคลือบผิวกระทะบาง ๆ

2.โขลกพริกชวงเจียพอหยาบ นำกระทะที่ทอดถั่วกลับขึ้นตั้งไฟอ่อน ใส่พริกชวงเจียและพริกแห้งซอย พร้อมด้วยน้ำมันงา ผัดสั้น ๆ จนหอมและพริกแห้งกรอบดี ระวังอย่าให้ไหม้ ยกออกจากความร้อน เติมซีอิ๊วขาว จิ๊กโฉ่ว และน้ำตาลทราย คนจนน้ำตาลละลายและส่วนผสมเข้ากันดี พักไว้

3.ตั้งน้ำให้เดือด ล้างปวยเล้งให้สะอาด นำลงลวกประมาณ 45 วินาที ตักขึ้นแช่น้ำเย็นจัดเพื่อหยุดความร้อน บีบน้ำออกให้แห้งหมาด แล้วหั่นเป็นท่อน

4.ใช้น้ำเดิมต้มฟองเต้าหู้อบแห้งประมาณ 4–5 นาที หรือจนสุกนุ่ม ตักขึ้นแช่น้ำเย็นเพื่อหยุดความร้อน สะเด็ดน้ำให้ดี พักไว้

5.ใส่ปวยเล้งและฟองเต้าหู้ลงคลุกกับน้ำยำให้ทั่ว ตามด้วยถั่วลิสงทอด เคล้าพอให้ส่วนผสมกระจายทั่วดี ตักใส่จานเสิร์ฟ

Ingredients


  • Raw Peanuts50 g

  • Vegetable Oilfor frying

  • Dried Tofu Skin40 g

  • Spinach200 g

  • Sesame Oil2 tsp

  • Sichuan Peppercorns½ tsp

  • Dried Chilies3

  • Light Soy Sauce2 tbsp

  • Chinese Black Vinegar2 tbsp

  • Sugar1 tsp

How to cook


1.Rinse the peanuts and pat them mostly dry. Place in a pan and add enough vegetable oil to cover. Fry slowly over low to medium heat until cooked through and the skins turn a deep reddish brown. Remove and drain, then allow to cool completely and become crisp. Pour off the oil, leaving just enough to lightly coat the pan.

2.Coarsely crush the Sichuan peppercorns. Return the pan to low heat and add the crushed Sichuan peppercorns, sliced dried chilies, and sesame oil. Stir-fry briefly until fragrant and the chilies are crisp, taking care not to burn them. Remove from the heat, then add the light soy sauce, Chinese black vinegar, and sugar. Stir until the sugar dissolves and the dressing is well combined. Set aside.

3.Bring a pot of water to a boil. Wash the spinach thoroughly and blanch for about 45 seconds. Transfer immediately to ice water to stop the cooking. Squeeze out the excess water and cut into sections.

4.Using the same boiling water, cook the dried tofu skin for 4–5 minutes, or until tender. Transfer to cold water to stop the cooking, then drain thoroughly.

5.Toss the spinach and tofu skin with the dressing until evenly coated. Add the fried peanuts and toasted white sesame seeds, toss gently to combine, and transfer to a serving plate.
