ไข่ตุ๋นสไตล์เกาหลีมีเอกลักษณ์ด้วยวิธีปรุงในหม้อดินที่เรียกว่า “ตุ๊กแบกี” (Ttukbaegi) โดยคนไข่ให้เริ่มจับตัว ก่อนปิดฝาและตุ๋นต่อจนสุกนุ่มฟูขึ้นเหนือขอบหม้อ เสิร์ฟร้อน ๆ ขณะเนื้อไข่ยังนุ่มฟู สูตรนี้ใช้น้ำมะพร้าวแทนน้ำซุป ให้กลิ่นหอมและรสหวานละมุนตามธรรมชาติ เสริมรสอูมามิและเนื้อสัมผัสด้วยกุ้ง กุ้งแห้ง และวุ้นเส้น เป็นไข่ตุ๋นรสชาติแตกต่างที่อร่อยได้ทั้งรับประทานเปล่า ๆ หรือเสิร์ฟเป็นกับข้าว

ส่วนประกอบ


  • ไข่ไก่5 ฟอง

  • เนื้อกุ้ง100 กรัม

  • วุ้นเส้น30 กรัม

  • กุ้งแห้ง10 กรัม

  • ต้นหอม (ซอย)1 ต้น

  • น้ำมะพร้าว225 มิลลิลิตร

  • น้ำตาลทราย1 ช้อนชา

  • น้ำปลา1 ช้อนโต๊ะ

  • น้ำมันมะพร้าว1 ช้อนชา

วิธีทำ


1.หั่นเนื้อกุ้งเป็นเต๋าเล็ก ๆ ล้างกุ้งแห้งผ่านน้ำ แช่น้ำให้นุ่มเล็กน้อย ซับให้แห้ง แล้วโขลกพอแหลก แช่วุ้นเส้นให้นุ่ม สะเด็ดน้ำ แล้วตัดเป็นท่อนสั้น ๆ

2.ตอกไข่ใส่ชาม เติมน้ำมะพร้าว น้ำตาลทราย และน้ำปลา ตีให้ส่วนผสมเข้ากัน ใส่เนื้อกุ้ง กุ้งแห้ง วุ้นเส้น และต้นหอมซอยครึ่งหนึ่ง คนให้กระจายทั่วดี

3.ตั้งหม้อดินเกาหลีขนาด 15 เซนติเมตรบนไฟกลาง ใส่น้ำมันมะพร้าว พอหม้อร้อน เทส่วนผสมไข่ลงไป ใช้ช้อนคนเบา ๆ โดยคนจากก้นและขอบหม้อเข้าหากึ่งกลางอย่างต่อเนื่อง จนไข่เริ่มจับตัวและส่วนผสมข้นขึ้น

4.เมื่อไข่สุกประมาณครึ่งหนึ่ง ลดเป็นไฟอ่อน ปิดฝา ตุ๋นต่อประมาณ 5–6 นาที หรือจนไข่สุก ฟู และยังคงความชุ่มฉ่ำ

5.เปิดฝา โรยต้นหอมที่เหลือ จัดเสิร์ฟทันที รับประทานขณะร้อน

Korean-style steamed eggs are traditionally cooked in an earthenware pot called a ttukbaegi. The eggs are stirred as they begin to set, then covered and gently cooked until soft and fluffy, rising above the rim of the pot. This version uses coconut water in place of stock, adding a delicate aroma and natural sweetness. Shrimp, dried shrimp, and glass noodles provide extra umami and texture, making this a distinctive steamed egg dish that can be enjoyed on its own or served with rice as part of a meal.

Ingredients


  • Eggs5

  • Shrimp Meat100 g

  • Glass Noodles30 g

  • Dried Shrimp10 g

  • Spring Onion, sliced1 stalk

  • Coconut Water225 ml

  • Sugar1 tsp

  • Fish Sauce1 tbsp

  • Coconut Oil1 tsp

How to cook


1.Cut the shrimp into small dice. Rinse the dried shrimp, soak briefly until slightly softened, pat dry, then pound coarsely. Soak the glass noodles until softened, drain well, and cut into short lengths.

2.Crack the eggs into a bowl. Add the coconut water, sugar, and fish sauce, and whisk until well combined. Add the shrimp, dried shrimp, glass noodles, and half of the sliced spring onion. Stir to distribute evenly.

3.Heat a 15-cm Korean earthenware pot (ttukbaegi) over medium heat. Add the coconut oil. Once the pot is hot, pour in the egg mixture. Stir gently and continuously, scraping from the bottom and sides toward the center, until the eggs begin to set and the mixture starts to thicken.

4.When the eggs are about halfway cooked, reduce the heat to low and cover. Cook for another 5–6 minutes, or until the eggs are cooked through, puffed, and still soft and moist.

5.Remove the lid, garnish with the remaining sliced spring onion, and serve immediately while hot.
