ข้าวผัดขี้เมาที่มากับเครื่องทะเลสูตรนี้ มีรสจัดจ้านโดดเด่นด้วยเครื่องขี้เมาที่สับละเอียด เพื่อให้กินได้ง่ายขึ้น เสิร์ฟมาพร้อมกับใบกะเพราทอดกรอบ และไข่ดาว

ส่วนประกอบ


  • เครื่องขี้เมา

  • กระเทียม (สับ)2 กลีบ

  • พริกจินดาแดง (สับ)2 เม็ด

  • ใบกะเพรา (สับ)¼ ถ้วย

  • กระชาย (สับ)2 ช้อนชา

  • เม็ดพริกไทยอ่อน (สับ)1 ช่อ

  • ข้าวผัดทะเล

  • น้ำมันรำข้าวสำหรับทอด

  • ไข่เป็ด1 ฟอง

  • ใบกะเพรา¼ ถ้วย

  • ปลากะพง30 กรัม

  • กุ้งขาว2 ตัว

  • ปลาหมึก20 กรัม

  • น้ำมันรำข้าว1 ช้อนโต๊ะ

  • ข้าวสวย160 กรัม

  • ซีอิ๊วขาว1 ช้อนชา

  • น้ำปลา1 ช้อนชา

  • น้ำตาลทราย½ ช้อนชา

  • ซีอิ๊วดำหวาน¼ ช้อนชา

  • แตงกวาสำหรับเสิร์ฟ

  • มะนาวสำหรับเสิร์ฟ

วิธีทำ


1.ตั้งน้ำมันสำหรับทอด ดาวไข่เป็ด พักไว้ ทอดใบกะเพรา พักไว้ และฉ่าเครื่องซีฟู้ด (กุ้ง ปลา ปลาหมึก) พักไว้

2.ตั้งน้ำมัน ผัดเครื่องขี้เมา (กระเทียม พริกจินดา กะเพรา กระชาย และพริกไทยอ่อน) ด้วยไฟอ่อน ให้หอมดี

3.ใส่ข้าวสวย ปรุงรสด้วยซีอิ๊วขาว น้ำปลา น้ำตาลทราย และซีอิ๊วดำหวาน ใส่เครื่องซีฟู้ดที่พักไว้กลับลงไป เร่งไฟ ผัดให้หอมดี

4.ตักใส่จานเสิร์ฟ พร้อมด้วยไข่ดาว ใบกะเพราทอด เคียงด้วยแตงกวา และมะนาว รับประทานกับน้ำปลาพริก

This serenely drunken seafood fried rice has enough chilli in them to shake you off your worst hangover. Make it an ample meal with a crispy and oozing sunny side up.

Ingredients


  • Kee Mao Mix

  • Garlic (chopped)2 cloves

  • Thai Chillies (chopped)2

  • Holy Basil (chopped)¼ cup

  • Fingerroot (chopped)2 tsp

  • Green Peppercorn (chopped)1 sprig

  • Seafood Fried Rice

  • Rice Bran Oil

  • Duck Egg1

  • Holy Basil¼ cup

  • Seabass30 g

  • Prawn2

  • Squid20 g

  • Rice Bran Oil1 tbsp

  • Steamed Rice160 g

  • Light Soy Sauce1 tsp

  • Fish Sauce1 tsp

  • Sugar½ tsp

  • Dark Soy Sauce¼ tsp

  • Cucumberfor serving

  • Limefor serving

How to cook


1.In a pan with hot oil, fry duck egg until crispy, leave to drain. Fry the holy basil until crispy, leave to drain as well. In the same oil, flash seafood in the hot oil until just cooked and set aside.

2.Heat oil in a wok, add all the kee mao mix (garlic, Thai chillies, holy basil, fingerroot and green peppercorn) over the low heat until fragrant.

3.Add rice, light soy sauce, fish sauce, sugar and dark soy sauce. Add all the seafood that we cooked earlier. Turn up the heat and cook and toss the rice until aromatic and combined.

4.Transfer to a serving plate, topped with crispy eggs and holy basil. Serve with lime wedge, cucumber and chilli fish sauce.
