A brookie combines two all-time favorites—brownies and chocolate chip cookies—in one irresistible treat. This version is made as individual portions, roughly the size of cupcakes, with a chocolate chip cookie base, a rich chocolate brownie layer scented with brown butter, and a few extra pieces of cookie dough on top. The result is a mix of crisp, soft, and chewy textures with plenty of chocolate in every bite.

Ingredients

  • Chocolate Chip Cookie Dough

  • Unsalted Butter60 g

  • Rice Bran Oil Shortening60 g

  • Brown Sugar50 g

  • Granulated Sugar100 g

  • Egg1

  • Vanilla Extract1 tsp

  • All-purpose Flour140 g

  • Baking Soda½ tsp

  • Salt¼ tsp

  • Chocolate Chips170 g

  • Brownie Batter

  • Dark Chocolate55 g

  • Cocoa Powder50 g

  • Rice Bran Oil3 tbsp

  • Unsalted Butter225 g

  • Eggs3

  • Brown Sugar110 g

  • Vanilla Extract1 tsp

  • Icing Sugar210 g

  • All-purpose Flour60 g

How to cook

1.Prepare the cookie dough. Beat the unsalted butter, rice bran oil shortening, brown sugar, and granulated sugar until well combined. Add the egg and vanilla, and beat until smooth.

2.Sift in the all-purpose flour, baking soda, and salt. Mix on low speed just until combined. Add the chocolate chips and stir until evenly distributed.

3.Using a No. 50 cookie scoop, or by weighing, portion the dough into 24 pieces, 20 g each. Arrange on a tray and freeze for 20 minutes. Refrigerate the remaining cookie dough for topping.

4.Prepare the brownie batter. Place the dark chocolate, cocoa powder, and rice bran oil in a heatproof mixing bowl. Heat the unsalted butter in a saucepan until melted, then continue cooking until it turns deep golden and develops a nutty aroma. Remove from the heat and strain over the chocolate mixture. Stir until the chocolate is completely melted and the mixture is smooth. Set aside.

5.Beat the eggs, brown sugar, and vanilla until light and fluffy. Add the icing sugar and continue beating until well combined. Add the chocolate mixture and fold with a rubber spatula until smooth. Add the all-purpose flour and mix just until combined. Transfer the brownie batter to a piping bag and set aside.

6.Preheat the oven to 180°C. Prepare two 12-hole removable-bottom mini cake pans and lightly coat them with cooking spray.

7.Remove 6 portions of cookie dough from the freezer at a time. Place each portion between two sheets of plastic and flatten with the palm of your hand, then press into the bottom of each cavity. Repeat until all 24 cavities are lined, keeping the remaining dough frozen until needed so it stays firm.

8.Pipe approximately 35 g of brownie batter over each cookie base. Break the reserved cookie dough into small pieces and place about 2 pieces on top of each brownie.

9.Bake for 25–28 minutes. Leave to cool to room temperature before pushing the brookies out of the pans. Serve at room temperature for a softer texture, or chill before serving for a firmer, chewier brownie texture.
