Pan de Sal (ปัน เด ซัล) คือขนมปังยอดนิยมของชาวฟิลิปปินส์ที่รับประทานเป็นอาหารเช้าและของว่าง แม้ชื่อจะแปลตรงตัวว่า “ขนมปังเกลือ” แต่จริง ๆ แล้วเป็นขนมปังเนื้อนุ่ม รสหวานอ่อน ๆ โดดเด่นด้วยการคลุกเกล็ดขนมปังก่อนอบจนได้ผิวสัมผัสกรุบเบา ๆ นิยมรับประทานอุ่น ๆ กับเนย ชีส แยม หรือจิบคู่กับกาแฟร้อน สูตรนี้เพิ่มความหอมละมุนด้วยกะทิผง ให้กลิ่นกะทิอ่อน ๆ ที่เข้ากันได้ดีกับเนื้อขนมปัง โดยยังคงเอกลักษณ์ของ Pan de Sal ไว้อย่างครบถ้วน

ส่วนประกอบ


  • นมสด180 กรัม

  • น้ำสะอาด200 กรัม

  • น้ำตาลทราย70 กรัม

  • ยีสต์ผง2¼ ช้อนชา

  • น้ำมันมะพร้าว25 กรัม

  • แป้งขนมปัง300 กรัม

  • แป้งสาลีอเนกประสงค์300 กรัม

  • กะทิผง25 กรัม

  • เกลือ10 กรัม

  • กลิ่นมะพร้าว½ ช้อนชา

  • ไข่ไก่1 ฟอง

  • เกล็ดขนมปัง50 กรัม

วิธีทำ


1.อุ่นนมสดและน้ำให้มีอุณหภูมิประมาณ 35–37°C ใส่น้ำตาลทรายและยีสต์ พักไว้ประมาณ 5 นาที จนยีสต์เริ่มทำงาน

2.เติมน้ำมันมะพร้าว ไข่ไก่ กลิ่นมะพร้าว แป้งขนมปัง แป้งสาลีอเนกประสงค์ กะทิผง และเกลือ นวดจนโดเนียน ยืดหยุ่น และสามารถขึงเป็นแผ่นบางได้ (Windowpane Test) ประมาณ 10-12 นาที

3.คลึงโดเป็นก้อน วางลงในชามที่ทาน้ำมันบาง ๆ คลุมด้วยผ้าหรือพลาสติกแรป พักไว้ประมาณ 1½ ชั่วโมงหรือจนโดมีขนาดเพิ่มขึ้นเป็นประมาณ 2 เท่า

4.ไล่ลมออกจากโดเบา ๆ แล้วแบ่งโดก้อนละ 40 กรัม คลึงเป็นก้อนกลม นำไปกลิ้งบนผ้าชุบน้ำหมาด ๆ แล้วคลุกกับเกล็ดขนมปังป่นให้เคลือบบาง ๆ จัดเรียงลงบนถาดอบ

5.คลุมด้วยผ้า พักให้ขึ้นอีกประมาณ 30–45 นาที หรือจนโดพองตัวเกือบเป็น 2 เท่า

6.อบที่ 170°C นาน 20 นาที หรือจนขนมปังมีสีเหลืองทอง พักบนตะแกรงให้คลายร้อนเล็กน้อยก่อนเสิร์ฟ

Pan de Sal is the Philippines' most beloved bread roll, commonly enjoyed for breakfast or as an afternoon snack. Although its name literally translates to "bread of salt," it is actually a soft, lightly sweet bread distinguished by its delicate coating of fine breadcrumbs, which bakes into a subtly crisp crust. Freshly baked Pan de Sal is traditionally enjoyed warm with butter, cheese, jam, or simply alongside a cup of coffee. This version is infused with coconut milk powder, adding a gentle coconut aroma that complements the soft, fluffy crumb while preserving the classic character of traditional Pan de Sal.

Ingredients


  • Milk180 g

  • Water200 g

  • Sugar70 g

  • Instant Yeast2¼ tsp

  • Coconut Oil25 g

  • Bread Flour300 g

  • All-purpose Flour300 g

  • Coconut Milk Powder25 g

  • Salt10 g

  • Coconut Extract½ tsp

  • Egg1

  • Fine Breadcrumbs50 g

How to cook


1.Warm the milk and water to 35–37°C. Stir in the sugar and yeast, then let stand for about 5 minutes, or until the yeast becomes foamy.

2.Add the coconut oil, egg, coconut extract, bread flour, all-purpose flour, coconut milk powder, and salt. Knead for 10–12 minutes, or until the dough is smooth, elastic, and passes the windowpane test.

3.Shape the dough into a ball and place it in a lightly oiled bowl. Cover with plastic wrap or a damp kitchen towel and let rise for about 1½ hours, or until doubled in size.

4.Gently deflate the dough and divide it into 40 g portions. Shape each portion into a smooth ball. Roll each dough ball lightly over a damp cloth, then coat with the fine breadcrumbs. Arrange on a baking tray.

5.Cover and let proof for 30–45 minutes, or until the dough has almost doubled in size.

6.Bake in a preheated 170°C oven for 20 minutes, or until golden brown. Transfer to a wire rack and allow to cool slightly before serving.
