A contemporary take on chicken satay, using mid-joint chicken wings prepared by pushing the meat down to expose the bones, creating natural handles. The wings are marinated with aromatic herbs, spices, and coconut milk, then grilled until fragrant and beautifully browned. Served with a rich red curry sauce enhanced with peanut butter, along with sweet and tangy ajat pickles for a refreshing contrast. Enjoy as a snack or serve with toast for a more substantial meal.

  • Red Curry Paste35 g

  • Coconut Milk220 ml

  • Fish Sauce1 tsp

  • Tamarind Juice2 tsp

  • Palm Sugar2 tsp

  • Peanut Butter1 tbsp

  • Ajat

  • Rice Vinegar3 tbsp

  • Sugar3 tbsp

  • Salt1 tsp

  • Cucumberfor serving

  • Shallotsfor serving

  • Red Chilifor serving

How to cook

1.Loosen the tendons and meat around one end of both bones in each mid-joint chicken wing. Carefully push the meat down toward the opposite end until both bones are exposed. Shape the meat into a compact portion, leaving the two exposed bones as handles. Repeat with the remaining wings.

2.Blend all the marinade ingredients until smooth. Toss thoroughly with the prepared chicken wings and marinate in the refrigerator for 6 hours.

3.To make the ajat, combine the rice vinegar, sugar, and salt in a saucepan. Heat until the sugar and salt have completely dissolved. Remove from the heat and allow to cool completely. Add the cucumber, shallots, and red chili. Set aside until ready to serve.

4.Remove the chicken wings from the marinade and gently wipe off any excess. Grill until cooked through and nicely browned. Alternatively, bake at 190°C for approximately 15 minutes, turning halfway through, until the chicken is fully cooked and well browned.

5.To make the red curry peanut sauce, sauté the red curry paste in the vegetable oil until fragrant. Gradually add the coconut milk, stirring until well combined. Season with fish sauce, tamarind juice, palm sugar, and peanut butter. Simmer until the sauce thickens slightly, then remove from the heat.

6.Serve the satay chicken wings with the red curry peanut sauce, ajat, and toast.
