ข้าวกระทะร้อนหมูย่างสามสหาย ได้แรงบันดาลใจจากข้าวที่เสิร์ฟในหม้อร้อนสไตล์เกาหลี ซึ่งโดดเด่นด้วยข้าวก้นหม้อเกรียมหอม ๆ และการคลุกทุกอย่างเข้าด้วยกันก่อนรับประทาน เมนูนี้นำแนวคิดดังกล่าวมาตีความใหม่ในแบบไทย ๆ ด้วยหมูย่างซอสเข้มข้น เสิร์ฟบนข้าวกระทะร้อน พร้อม “สามสหาย” อย่างงาขาวคั่ว หอมเจียว และกระเทียมเจียว ที่เติมทั้งความหอม ความกรุบ และมิติของรสสัมผัสในทุกคำ ก่อนปิดท้ายด้วยไข่ออนเซ็นและพริกผัดน้ำมันตามชอบ

  • ข้าวสวย400 กรัม

  • น้ำมันงาสำหรับทาภาชนะเสิร์ฟ

  • เนยเค็ม10 กรัม

  • หอมเจียว2 ช้อนโต๊ะ

  • กระเทียมเจียว1 ช้อนโต๊ะ

  • งาขาวคั่ว2 ช้อนชา

  • ต้นหอม (ซอย)3 ช้อนโต๊ะ

  • ไข่ออนเซ็น2 ฟอง

  • พริกผัดน้ำมันหมูย่าง กับซอส

  • หมูย่าง กับซอส

  • สันคอหมู300 กรัม

  • ซีอิ๊วขาว1½ ช้อนโต๊ะ

  • ซอสหอยนางรม1½ ช้อนโต๊ะ

  • ซีอิ๊วดำหวาน½ ช้อนชา

  • เหล้าจีน1 ช้อนโต๊ะ

  • น้ำตาลทราย2 ช้อนชา

  • น้ำมันงา1 ช้อนชา

  • พริกไทยขาว¼ ช้อนชา

  • น้ำสะอาด4 ช้อนโต๊ะ

  • น้ำมันพืช1 ช้อนชา

  • โคนต้นหอมซอย1 ช้อนโต๊ะ

  • แป้งมันฮ่องกง¼ ช้อนชา

  • น้ำสะอาด1 ช้อนโต๊ะ

วิธีทำ


1.ผสมซีอิ๊วขาว ซอสหอยนางรม ซีอิ๊วดำหวาน เหล้าจีน น้ำตาล น้ำมันงา และพริกไทยเข้าด้วยกัน นำไปหมักสันคอหมู พักในตู้เย็นอย่างน้อย 2 ชั่วโมง หรือข้ามคืน

2.นำหมูออกจากตู้เย็น พักไว้ประมาณ 15 นาที ยกชิ้นหมูขึ้นจากน้ำหมัก วางบนตะแกรง อบที่ 180°C ประมาณ 20 นาที กลับด้านเมื่อครบครึ่งเวลา พักไว้ให้คลายร้อน

3.ผสมน้ำหมักที่เหลือ กับน้ำสะอาด เตรียมไว้

4.ตั้งหม้อ ใส่น้ำมัน ผัดโคนต้นหอมจนหอม ใส่ส่วนผสมน้ำหมักที่เตรียมไว้ พอเดือด เคี่ยว 1–2 นาที ผสมแป้งมันกับน้ำ ใส่ลงไป คนจนซอสข้นเป็นเงา พักไว้

5.ทา Cast Iron Skillet ด้วยน้ำมันงาบาง ๆ ใส่ข้าวสวยลงไป กดพอแน่น วางเนยลงบนข้าว แล้วตั้งไฟอ่อนประมาณ 2–3 นาที ให้ก้นข้าวเริ่มเกรียม

6.ราดซอสลงบนหน้าข้าว หั่นหมูเป็นชิ้นพอดีคำ จัดวางบนครึ่งหนึ่งของหน้าข้าว

7.ผสมหอมเจียว กระเทียมเจียว และงาขาวคั่ว โรยบนอีกด้านของข้าว โรยต้นหอมซอย วางไข่ออนเซ็นตรงกลาง เสิร์ฟพร้อมพริกผัดน้ำมัน

8.ก่อนรับประทาน คลุกไข่ออนเซ็น ซอส หมู และเครื่องต่าง ๆ ให้เข้ากัน พร้อมขูดข้าวก้นเกรียมขึ้นมารับประทาน

Ingredients


  • Cooked Jasmine Rice400 g

  • Sesame Oilfor greasing the skillet

  • Salted Butter10 g

  • Fried Shallots2 tbsp

  • Fried Garlic1 tbsp

  • Toasted White Sesame Seeds2 tsp

  • Sliced Spring Onions3 tbsp

  • Onsen Eggs2

  • Chili Oilfor serving

  • Grilled Pork & Sauce

  • Pork Collar300 g

  • Light Soy Sauce1½ tbsp

  • Oyster Sauce1½ tbsp

  • Sweet Dark Soy Sauce½ tsp

  • Shaoxing Wine1 tbsp

  • Sugar2 tsp

  • Sesame Oil1 tsp

  • Ground White Pepper¼ tsp

  • Water4 tbsp

  • Vegetable Oil1 tsp

  • Finely Sliced Spring Onion Whites1 tbsp

  • Hong Kong Potato Starch¼ tsp

  • Water1 tbsp

How to cook


1.Combine the light soy sauce, oyster sauce, sweet dark soy sauce, Shaoxing wine, sugar, sesame oil, and white pepper. Marinate the pork collar for at least 2 hours, or preferably overnight.

2.Remove the pork from the refrigerator 15 minutes before cooking. Lift the pork from the marinade and place it on a wire rack. Roast in a preheated 180°C oven for about 20 minutes, turning halfway through. Allow to rest before slicing.

3.Combine the reserved marinade with the 4 tablespoons of water and set aside.

4.Heat the vegetable oil in a small saucepan. Sauté the spring onion whites until fragrant, then add the reserved marinade mixture. Bring to a simmer and cook for 1–2 minutes. Stir together the potato starch and 1 tablespoon of water, then add to the sauce, stirring until glossy and slightly thickened.

5.Lightly grease a cast-iron skillet with sesame oil. Spread the cooked rice evenly into the skillet and press down gently. Place the butter on top, then cook over low heat for 2–3 minutes until the bottom begins to develop a golden crispy crust.

6.Spoon the sauce over the rice. Slice the grilled pork into bite-sized pieces and arrange over one half of the rice.

7.Combine the fried shallots, fried garlic, and toasted sesame seeds, then scatter over the remaining half of the rice. Sprinkle with the spring onions, place the onsen egg in the center, and serve with chili oil on the side.

8.Before serving, break the onsen egg and mix it together with the pork, sauce, rice, and crispy aromatics. Scrape up the crispy rice from the bottom of the skillet and enjoy immediately.
