แรงบันดาลใจจากเมนูซี่โครงหมูเปรี้ยวหวานสไตล์จีน ซี่โครงหมูทอดถูกนำมาเคี่ยวในซอสรสเปรี้ยวหวานที่ผสานทั้งน้ำส้มสายชูข้าวและจิ๊กโฉ่ว ให้รสชาติกลมกล่อมและมีมิติ ก่อนโรยหน้าด้วยขิงทอดกรอบที่ช่วยเพิ่มทั้งความหอมและเนื้อสัมผัส

ส่วนประกอบ


  • ซี่โครงหมู1 กิโลกรัม

  • เหล้าจีน1 ช้อนโต๊ะ

  • ซีอิ๊วขาว2 ช้อนชา

  • แป้งมันฮ่องกง1 + 3 ช้อนโต๊ะ

  • ขิง (ซอย)60 กรัม

  • น้ำมันรำข้าวสำหรับทอด

  • ซอส

  • น้ำมันรำข้าว2 ช้อนโต๊ะ

  • ขิง (หั่นแว่น)20 กรัม

  • น้ำตาลกรวด100 กรัม

  • เหล้าจีน4 ช้อนโต๊ะ

  • น้ำส้มสายชูข้าว4 ช้อนโต๊ะ

  • จิ๊กโฉ่ว3 ช้อนโต๊ะ

  • ซีอิ๊วขาว2 ช้อนโต๊ะ

  • ซีอิ๊วดำ1 ช้อนชา

  • น้ำสะอาด1 ถ้วย

วิธีทำ


1.นวดซี่โครงหมูกับเหล้าจีนและซีอิ๊วขาว พักไว้ประมาณ 10 นาที

2.ตั้งน้ำมันที่อุณหภูมิ 180°C เคล้าขิงซอยกับแป้งมันฮ่องกง 1 ช้อนโต๊ะ เคาะแป้งส่วนเกินออก แล้วทอดจนกรอบ ตักขึ้นพักไว้

3.เคล้าซี่โครงหมูกับแป้งมันฮ่องกงที่เหลือบาง ๆ ทยอยลงทอดจนผิวเหลืองกรอบ ตักขึ้นพักไว้

4.ตั้งกระทะ ใส่น้ำมันรำข้าว ผัดขิงหั่นแว่นจนหอม ใส่น้ำตาลกรวด คนพอเริ่มละลาย เติมเหล้าจีน ซีอิ๊วขาว ซีอิ๊วดำ และน้ำสะอาด คนให้เข้ากัน จากนั้นใส่น้ำส้มสายชูข้าวและจิ๊กโฉ่ว ตามด้วยซี่โครงหมู (สามารถเติมน้ำสะอาดเพิ่ม เพื่อให้คลุมชิ้นหมู)

5.ปิดหน้าด้วยกระดาษไข ลดเป็นไฟอ่อน เคี่ยวประมาณ 30 นาที

6.เปิดกระดาษไข เร่งเป็นไฟกลางถึงแรง คลุกเป็นระยะจนซอสงวดและเคลือบซี่โครงหมูทั่วดี

7.ตักเสิร์ฟ โรยหน้าด้วยขิงทอด

Inspired by Chinese-style sweet and sour pork ribs, this dish features deep-fried pork ribs simmered in a rich sweet-and-sour sauce made with both rice vinegar and Chinkiang vinegar for a well-balanced flavour with added depth. Finished with crispy fried ginger for an aromatic crunch and extra texture.

Ingredients


  • Pork Ribs1 kg

  • Shaoxing Wine1 tbsp

  • Light Soy Sauce2 tsp

  • Hong Kong Potato Starch1 + 3 tbsp

  • Ginger (finely julienned)60 g

  • Rice Bran Oilfor deep-frying

  • Sauce

  • Rice Bran Oil2 tbsp

  • Ginger (sliced)20 g

  • Rock Sugar100 g

  • Shaoxing Wine4 tbsp

  • Rice Vinegar4 tbsp

  • Chinkiang Vinegar3 tbsp

  • Light Soy Sauce2 tbsp

  • Dark Soy Sauce1 tsp

  • Water1 cup

How to cook


1.Massage the pork ribs with the Shaoxing wine and light soy sauce. Leave to marinate for about 10 minutes.

2.Heat the rice bran oil to 180°C. Toss the julienned ginger with 1 tablespoon of the Hong Kong potato starch, shaking off any excess. Deep-fry until crisp, then remove and drain well.

3.Lightly coat the pork ribs with the remaining 3 tablespoons of potato starch. Working in batches, deep-fry until the exterior is golden and crisp. Remove and set aside.

4.Heat 2 tablespoons of rice bran oil in a pan. Add the sliced ginger and stir-fry until fragrant. Add the rock sugar and cook until it begins to melt. Add the Shaoxing wine, light soy sauce, dark soy sauce, and water, stirring to combine. Add the rice vinegar and Chinkiang vinegar, followed by the fried pork ribs. Add a little more water if necessary to ensure the ribs are mostly submerged.

5.Cover the surface with a piece of parchment paper, reduce the heat to low, and simmer for about 30 minutes, or until the ribs are tender.

6.Remove the parchment paper and increase the heat to medium-high. Toss the ribs occasionally as the sauce reduces, until it becomes glossy and evenly coats the ribs.

7.Transfer to a serving plate and finish generously with the crispy fried ginger.
