ผัดสามสหาย 地三鲜 (Dì Sān Xiān) เป็นอาหารจีนคลาสสิกจากแถบตะวันออกเฉียงเหนือของจีน ชื่อมีความหมายถึง “สามของดีจากผืนดิน” ซึ่งก็คือ มะเขือม่วง มันฝรั่ง และพริกหวาน นำมาทอดแล้วผัดเคล้ากับซอสรสกลมกล่อม สูตรนี้นำมาปรับเป็นเมนูเจ โดยตัดกระเทียมและต้นหอมที่นิยมใช้ในสูตรทั่วไป แล้วเพิ่มความหอมด้วยขิงและเซเลอรี่ ได้รสชาติเข้มข้นพร้อมเนื้อสัมผัสที่แตกต่างของผักทั้งสามชนิด

ส่วนประกอบ


  • มะเขือม่วง300 กรัม

  • เกลือ1 ช้อนชา

  • มันฝรั่ง200 กรัม

  • แป้งมันฮ่องกง1+2 ช้อนโต๊ะ

  • พริกหวาน120 กรัม

  • ขิง (หั่นแว่น)15 กรัม

  • เซเลอรี่ (ซอย)80 กรัม

  • ซอสเห็ดหอมเจ1 ช้อนโต๊ะ

  • ซีอิ๊วขาว1 ช้อนโต๊ะ

  • ซีอิ๊วดำหวาน1 ช้อนชา

  • น้ำส้มสายชูข้าว1 ช้อนโต๊ะ

  • น้ำตาลทราย1 ช้อนชา

  • แป้งมันฮ่องกง2 ช้อนชา

  • น้ำสะอาด3 ช้อนโต๊ะ

  • งาขาวคั่วสำหรับตกแต่ง

วิธีทำ


1.หั่นมะเขือม่วงเป็นชิ้นขนาด 1 นิ้ว เคล้ากับเกลือ พักไว้ 10 นาที

2.ล้างทำความสะอาดมันฝรั่ง หั่นเป็นชิ้น ล้างผ่านน้ำ แล้วซับพอแห้ง เคล้ามันฝรั่ง กับแป้งมันฮ่องกง 1 ช้อนโต๊ะ ทอดที่ 150 องศาเซลเซียส เป็นเวลา 6-8 นาที หรือจนสุกดี พักไว้

3.ล้างมะเขือม่วงเพื่อเอาเกลือออก ซับพอแห้ง เคล้ากับแป้งมันฮ่องกง 2 ช้อนโต๊ะ นำลงทอด 180 องศาเซลเซียสจนสุกดี สะเด็ดน้ำมันพักไว้

4.นำพริกหวานลงฉ่าในน้ำมันสัก 15 วินาที ตักออกมาสะเด็ดน้ำมัน

5.ตักน้ำมันออกจากกระทะให้เหลือประมาณ 1 ½ ช้อนโต๊ะ

6.ผสมซอสเห็ดหอม ซีอิ๊วขาว ซีอิ๊วดำ น้ำส้มสายชูข้าว น้ำตาลทราย แป้งมันฮ่องกง และน้ำสะอาด เพื่อเป็นซอส

7.นำกระทะตั้งไฟ ผัดขิง และเซเลอรี่ให้สุกหอม และขึ้นสีเล็กน้อย ใส่ส่วนผสมซอสลงไป ลดไฟ เคี่ยวให้สุกข้นดี ใส่เครื่องที่พักไว้ลงไป เคล้าให้ซอสเคลือบดี ตักเสิร์ฟ โรยงาขาวคั่ว

Three Earthly Treasures, or 地三鲜 (Dì Sān Xiān), is a classic dish from northeastern China. Its name refers to “three treasures from the earth”—eggplant, potato, and bell pepper. The vegetables are fried and then tossed in a savory sauce. This version is adapted for a Jay (Chinese vegan) diet, omitting the garlic and spring onion commonly used in traditional recipes and replacing their aromatic qualities with ginger and celery. The result is a flavorful dish with contrasting textures from all three vegetables.

Ingredients


  • Eggplant300 g

  • Salt1 tsp

  • Potato200 g

  • Potato Starch1 + 2 tbsp

  • Bell Pepper120 g

  • Ginger (sliced)15 g

  • Celery (sliced)80 g

  • Vegetarian Mushroom Sauce1 tbsp

  • Light Soy Sauce1 tbsp

  • Sweet Dark Soy Sauce1 tsp

  • Rice Vinegar1 tbsp

  • Sugar1 tsp

  • Potato Starch2 tsp

  • Water3 tbsp

  • Toasted White Sesame Seedsfor garnish

How to cook


1.Cut the eggplant into 1-inch pieces. Toss with the salt and set aside for 10 minutes.

2.Wash the potato and cut into bite-sized pieces. Rinse under running water and pat dry. Toss with 1 tablespoon of potato starch. Deep-fry at 150°C for 6–8 minutes, or until cooked through. Remove and drain.

3.Rinse the eggplant to remove the excess salt and pat dry. Toss with 2 tablespoons of potato starch. Deep-fry at 180°C until tender and cooked through. Remove and drain.

4.Briefly fry the bell pepper in the hot oil for about 15 seconds. Remove and drain.

5.Pour off the excess oil, leaving approximately 1½ tablespoons in the wok.

6.Combine the vegetarian mushroom sauce, light soy sauce, sweet dark soy sauce, rice vinegar, sugar, 2 teaspoons of potato starch, and water to make the sauce.

7.Heat the wok and stir-fry the ginger and celery until fragrant and lightly browned. Add the sauce mixture, reduce the heat, and cook until thickened. Add the fried potato, eggplant, and bell pepper. Toss gently until evenly coated with the sauce. Transfer to a serving plate and garnish with toasted white sesame seeds.
